Ingredients

For this pizookie recipe you'll need the following simple ingredients:

  • Butter: Adds moisture to the cookie but also provides flavor and a deep richness you can't get from other types of fats used in baking.
  • Sugar: This deep dish chocolate chip cookie dessert uses a combination of white and brown sugar. They both sweeten but the brown sugar brings notes of molasses which creates a more complex and nuanced flavor.
  • Eggs: These work as the binder in your cookie that adds moisture and flavor.
  • Vanilla: Use pure vanilla extract for the best flavor.
  • Flour: We're using regular all-purpose flour in our pizookie recipe.
  • Semi-Sweet Chocolate: Use a combination of chunks, morsels, or minis for a variety of textures and varying pockets of chocolate in your cookie.

Substitutions and Variations

  • Gluten-free: If you need to make a gluten-free pizookie swap the all-purpose flour for your favorite gluten-free flour blend.
  • Chocolate: While semi-sweet chocolate is commonly to make chocolate chip cookies, you can experiment with using different types of chocolate including white chocolate, milk chocolate, and dark chocolate.
  • Add Nuts: Add your favorite nuts such as pecans, walnuts, hazelnuts, and more!
  • Browned Butter: Melt your butter in a saucepan until it's golden brown rather than simply melted. It will add a nuttier flavor to your cookies.

How to Store

Store any leftover pizookie wrapped in plastic wrap on the counter for up to two days. You can reheat by placing foil over the top and baking for 5 minutes.

You can also remove the skillet cookie from the skillet and freeze it for the future. Store it in slices or whole in an airtight container or bag for up to three months.

Can I make skillet cookies ahead of time?

Yes, you can make the dough up to 24 hours ahead. Refrigerate the cookie dough in an airtight container. Allow it to sit at room temperature to warm up before baking. Do not store in the cast iron skillet in the fridge as the moisture in the fridge can cause your skillet to rust.

Serving Suggestions

Expert Tips

  • The secret to those crispy edges and soft center in a skillet cookie is melting your butter before mixing. I know it sounds crazy - because melted butter in a regular cookie results in flat cookies. But melted butter in a skillet cookie is perfection.
  • Don't over mix! Mix just until all your ingredients come together!
  • Serve warm for the best flavor and pizookie experience!

Can I freeze the leftover dough if I only use 1/3 of it tonight? How would I use it when the time comes? Thank you for an amazing cookie!!

Yes - you can absolutely freeze it. You can either let it thaw and then press it into the skillet, or you can form it before freezing and bake it from frozen. Just add a few minutes to the baking time.
