Common Problems And Misconceptions When Making Turkey Tetrazzini

  1. Overcooking the turkey: Whether you’re using leftover turkey or cooking fresh turkey specifically for the dish, it’s important to avoid overcooking it, as this can result in dry, flavorless meat. To prevent this, cook your turkey until it’s done, then let it rest before chopping it up and incorporating it into the tetrazzini.
  2. Forgetting to season the dish: Because there are so many different ingredients in this recipe, it can be easy to overlook the importance of seasoning. To avoid this, taste the sauce as you go, adding salt, pepper, and other seasonings to get the flavors right.
  3. Using the wrong pasta: Choosing pasta that will hold up well in the creamy sauce and provide a good balance of texture and flavor is important. Some great options include egg noodles, fettuccine, or even spaghetti.
  4. Overcrowding the dish: To get the best results, be sure not to overcrowd the dish, as this can make it difficult for the sauce to penetrate the layers evenly and can lead to soggy pasta or dry turkey. Instead, layer the ingredients carefully and evenly, and bake the dish until it’s hot and bubbly.

Tips on how to store leftovers

  1. Cool it down quickly: This prevents bacteria from growing and causing food poisoning.
  2. Store it in the fridge: Cover it tightly with plastic wrap or aluminum foil or put it in an airtight container. This will help prevent it from drying out and absorbing other flavors in the fridge.
  3. Freeze it for later: You can freeze individual portions in freezer-safe containers or put the Tetrazzini in a large container and freeze it all at once. Be sure to label the container with the date and contents so you don’t forget what’s inside.
  4. Reheat carefully: You can do this in the oven or the microwave, but keep an eye on it so it doesn’t overcook or dry out. Add a splash of chicken broth or milk to prevent it from getting too dry.

Prep Time15 minutes

Cook Time45 minutes

Total Time1 hour

Ingredients

  • 2 cups of leftover turkey, chopped into small pieces
  • 16 oz. of spaghetti or any preferred pasta
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 4 cups of chicken broth
  • 2 cups of whole milk
  • 1 cup grated parmesan cheese
  • 1/2 cup breadcrumbs
  • 1/2 cup sliced mushrooms
  • 1/2 cup diced onion
  • 1/4 cup diced celery
  • 1/4 cup diced carrots
  • 2 cloves of minced garlic
  • 2 tbsp of olive oil
  • Salt and pepper to taste

Instructions

    1. Preheat your oven to 375°F.
    2. Start by cooking the spaghetti according to the package instructions, but make sure to cook it al dente. Once it's cooked, drain the water and set aside.
    3. Heat 2 tbsp of olive oil in a large pan over medium heat. Add sliced mushrooms, diced onion, celery, carrots, and minced garlic. Cook until the vegetables are soft and tender, which will take around 10 minutes.
    4. In a separate pot, start making the sauce. Melt the butter over medium heat and add the all-purpose flour. Stir constantly until the mixture turns into a light brown color. Gradually whisk in the chicken broth and whole milk until well combined. Keep stirring until the mixture starts to thicken.
    5. Once the sauce starts to thicken, add the cooked vegetables and leftover turkey. Give everything a mix and bring it to a simmer over medium heat. Stir occasionally until the mixture becomes thick.
    6. Add the cooked pasta to the sauce and mix well until the pasta is fully coated in the sauce.
    7. Transfer the mixture to a large casserole dish.
    8. In a small bowl, mix together the breadcrumbs and grated parmesan cheese. Sprinkle the mixture over the top of the tetrazzini evenly.
    9. Place the casserole dish in the preheated oven for approximately 25-30 minutes or until the breadcrumb topping becomes golden brown.
    10. Take the turkey tetrazzini out of the oven and let it cool for around 5 minutes before serving.
    11. Enjoy your delicious homemade turkey tetrazzini!
